Enchildas Suizas (& Meal Plan)

Image
Hi everyone! I hope you had an awesome weekend and are having a good Monday! There are certain ingredients that I  wish were more readily available here in Germany . But we just have to live without them.   So when a friend gave us some maiz (corn) tortillas he brought back from Spain, we were particularly excited. I've added them to this week's meal plan and a few additional recipes that include corn tortillas. I took advantage and went to a store (not so close to our house) and bought green salsa to make my favorite enchiladas, but first, our meal plan: What we're eating: Sunday: Enchiladas Suizas Monday: Mac & Cheese, The homemade version Tuesday: Tacos Wednesday: Migas con Huevo (corn tortilla fried in tiny pieces and then add eggs to the mixture) Thursday: Chicken Parmesan Friday: Pizza Saturday: Currywurst I had previously shared the recipe on here but I figured I'd re share it and add the corresponding pictures. I need to t...

Tuna Cake Recipe. #EasyDinners

Image
Today I will be sharing one of my easy dinners.  My friend passed me this recipe one day when I didn't know what to cook, I tried it and we were automatically hooked. The ingredients she mentioned were: 1 can of mushroom soup. 1 Bag of yellow lays, and a couple cans of Tuna. After doing this a couple of times and trying it with different things, I found out that what works best for us is if we add cheese. After all, everything tastes better with cheese, neh? So anyways, onto the Steps, you may notice that I didn't picture a can of mushroom soup, or actual lays, that is because this is what I can find in Germany. drain the Tuna, and grind the potato chips, you can make them very tiny or just little pieces (I prefer a mixture of both sizes) and mix the two in a baking dish, then add the cheese.  incorporate the mushroom soup and bake for 20 minutes at 180c. Let me know if you like it. P.S. for the three of us I usually use...

Enchiladas Suizas (green enchiladas)

Happy Valentine's day! Four years ago I decided to surprise Pablo with the perfect valentines day dinner, and since I have a friend who is a chef I decided to ask her for the favor of making everything for us (what a great gift, i know)! I decided to ask her for our favorite meal, Enchiladas Suizas, and my favorite cake, Red Velvet. and to help fill us him we added a nice Bean salad to it.  I bought all the necessary ingredients  and she got to it, I sadly don't have any pictures of our meal, only this one, b ut I can guarantee it was delicious! I had been going on and on about these enchiladas and decided today would be the perfect day to share the recipe. Here's what you need (makes 12): 12 Maiz (corn) tortillas 3 Whole Chicken Breasts 200 gr Manchego Cheese, Shredded 1 cup Sour Cream 10 green tomatoes (around the same size) 2 Serrano Chiles (or whatever green chiles you have available) 1/4 Onion Cilantro Here's what you need to do: Boil...

Marshmallow Fruit and More Salad (& Meal Plan)

Image
My favorite fall food is pumpkin pie and sometimes apple cobbler [mainly, the one they always gave out at thanksgiving lunch at school when I was little]. But I've never tried making my own so I will not be sharing those recipes. Would you believe me if I told you I have never cooked/baked anything pumpkin or squash related? It's true! My all time favorite recipe is a pretty simple dessert that everybody loves! Have you ever thought to add marshmallows to your fruit salad? My aunt does this all the time, and it makes it taste even better. I've been eating this thing at family gatherings since I was very little, an aunt would always make it for us. Now, today's recipe is not technically a fruit salad, it's also not a "marshmallow fruit salad" since our version only has two fruits, I call it the Marshmallow Plus Salad . because it's fruit plus walnuts, raisins and some other stuff. Usually we just put a little bit of everything into the mixture...

Kaese Makkaroni Rezept (Recipe)

Image
"Cheese Macaroni"  I guess you could say it's a German version of Mac and Cheese - After tasting it for the first time in May I knew it would be something I had to cook in the future. Last month, I finally decided it was time to try it out.   I went to buy all the necessary ingredients, but the store I go to didn't have Ricotta cheese, I substituted it for   Sahnequark , and extra cheese. I got it from a German cookbook but the english version is at the end of this post.

How I cook Baked Ziti

Image
I have a favorite dish, but unfortunately I am unable to make it here (in Germany) since it is difficult to get the ingredients. So I make my second favorite,  Baked Ziti .  I first tried it while in training at Sutherland Global Sources, one of the guys in our group was a Chef so he did this and brought it for us, I loved it!!  Today I will be sharing this recipe with you, I use the one in  All Recipes  as a guide, but I make some changes. If you have never tried this you could do it and hopefully enjoy it as much as we do here at home! :) INGREDIENTS: 1 pound [500 g] Cooked Ziti Pasta (or Penne) 1 pound [500 g] ground beef  1 jar tomato sauce 1 can pizza sauce 15 ounces [your favorite] cheese 1/4 cup grated Parmesan cheese 1/2 cup Sour cream 2 tablespoons butter 1/2 teaspoon pepper 8 ounces mozzarella, thinly sliced DIRECTIONS: [This is the way I prepare it, you can click on the links within this post for different...
